The short version
Every cast iron thread on Reddit ends the same way. Someone asks whether Smithey or Field Company is worth the money, and a chorus of owners who have both say no. One typical r/castiron reply: "I have a 12-inch skillet and a Dutch oven from Smithey. They are in no way 'worth it' over Lodge. I had the exact same things from Lodge." Cast iron is cast iron. Once it's seasoned, a $30 pan and a $200 pan sear a steak identically.
The Lodge 12-inch is around $30, made in Tennessee, pre-seasoned, and available at every Walmart and hardware store in the country. Buy it, cook bacon in it a few times, and stop reading reviews.
The complaint about the winner
Weight and surface. A 12-inch Lodge weighs about 8 pounds; it's a workout to pour from one-handed. And Lodge pans come with a pebbly sand-cast surface, not the glass-smooth finish of a vintage Griswold. That texture holds seasoning well but makes fried eggs stickier for the first few months. It smooths with use. Lodge's handles also sometimes have casting flash that needs a file.
The smaller option
The 10.25-inch Lodge at around $20 is the better pan for most single people and couples. It's lighter, heats more evenly on a normal home burner, and fits in any oven with room to spare. If you're not sure, buy this one. You can add the 12 later for $30.
Why not the others
- Smithey No. 12 (around $200): gorgeous, polished smooth, and noticeably heavier than the Lodge because of its thick base. It's a luxury object that cooks the same.
- Field Company No. 8 (around $165): the lightweight one, closest to vintage pans. If weight is your real problem, this is the only premium pan with a functional argument. It's still five Lodges.
- Enameled cast iron (Le Creuset, Staub): a different tool. Great for braising and acidic sauces, worse for high-heat searing, and the enamel chips.
- Vintage Griswold or Wagner (around $50 to $150 used): lighter and smoother than modern Lodge and often cheaper than Smithey. If you enjoy thrifting, this is the real premium option.
Which one for you
Cooking for a family: Lodge 12-inch. Cooking for one or two: Lodge 10.25-inch. You have $200 and want something beautiful on the stove: that's a fine reason to buy a Smithey, as long as you know that's what you're buying.
